Senator Gallinger has introduced into the United States Senate a bill making it "unlawful for any person, firm or corporation to sell, offer or expose for sale, within the District of Columbia, any poultry, refrigerated or otherwise, which has not been properly drawn and prepared by removing the viscera at the time of slaughter." Violation of the act is punishable by a fine not exceeding one hundred dollars, or by imprisonment not exceeding thirty days, or both. The bill was referred to the Committee on the District of Columbia and by that committee recommended for passage. The necessity for such legislation will be recognized by those who have given the matter thought. The keeping of meats, eggs, vegetables, fruits, etc., in cold storage has grown to such enormous proportions that it would seem that in the large cities the greater bulk of our foods is being so preserved.
