ABSTRACT

A book that deals with the chemical and physical properties of fatty acids normally would be considered as of interest only to those in the field of chemistry, physiology and a few closely related subjects. However, today medicine has advanced so that it is necessary as never before to understand the chemistry of cellular activities and the substances that may affect these activities. This book provides information on the nature and history of fats and waxes, classification and structure of the fatty acids, their physical properties and chemical reactions, the synthesis of fatty acids, and isolation and identification of fatty acids. This 600 page volume should prove useful for teaching purposes and collateral reading. It should also be read by those in medicine who are interested in fatty acids.
