ABSTRACT

The appearance of a seventh and greatly revised edition, within ten years after the original publication, bespeaks the popularity of this textbook on the principles of nutrition and practice of dietetics for nurses. The subject matter is intended to be covered in two courses, the one on the principles of nutrition and cookery and the other on diet in disease. Each chapter concludes with a list of questions the correct answers to which will serve as a summary and review. The last fifty pages of the book provide in tabular form information regarding the composition of foods and other useful information. There is also provided a concise description of procedures concerned with the management of diabetes, such as tests for sugar and acetoacetic acid in the urine and the technic of administering insulin. There is no discussion of protamine zinc insulin, however.
